Having founded Appetite Direct in 2003, Nigel has built it into an award winning company with one of the best reputations in Scotland! He has a wealth of experience, having started his career as a chef, working at many prominent events all over the world, including a Hollywood film premiere. His current objective is to ensure Appetite Direct surpasses expectations and is a pioneer in the events catering industry. As well as running a successful business, Nigel is a keen fisherman. He is also passionate about contributing to local communities and currently sponsors the Edinburgh International Festival, Edinburgh International Science Festival and the Edinburgh Book Festival.
Philly brings her knowledge and passion for events from years of experience working at prestigious venues such as the Signet Library and the Glen Tanar Estate, as well as designing events for Royalty. She has worked at Appetite since 2008, during which time she has pioneered many impressive events including, the Champions of Tennis, the Rolex Winter Wonderland and once had the daunting task of transforming a chicken shed into a banqueting hall. These days, Philly loves getting out about in Edinburgh and the Lothians, meeting clients to discuss and create beautiful and unique events.
Gareth recently joined the team as head of the Appetite Kitchen and his Northern Irish charm and culinary excellence have quickly transformed the kitchen. Gareth’s previous roles at Harvey Nichols and The Scotsman Hotel have allowed him to develop a modern twist on his classical cooking and he loves working with local suppliers to create innovative seasonal menus. As a chef he enjoys taking underappreciated cuts of meat and creating a high quality end product; a skill learned from his grandfather who was a renowned master butcher. Gareth’s aptitude for culinary precision and art allow him to create both beautiful and delicious dishes which are sure to be the center piece of any event.
Flora joined Appetite in 2013. Her passion lies in finding hidden venues around Edinburgh and matching them to our clients to create the perfect event. Her skills come from many years working in the hotel industry. She now utilises those skills to manage the planning and execution of all our events. Flora’s biggest Appetite accolade was securing our largest event to date and her attention to detail means that every event is polished to perfection. Flora is also a fantastic baker and regularly brings the office delicious treats.
Fred joined Appetite in 2014 as part of the kitchen team but has recently returned to his original training as head of the business and accounts team. Having previously run and owned a fantastic restaurant in Paris, Fred has a passion for food and drink which combined with his experience as a financial auditor, ensures a wealth of business acumen. As well as doing all of this, he is also known to run ultra-marathons, often running 10km before the work day has started!
Pippa has been working with Appetite Direct, developing marketing strategy and activity, since March 2015. Having worked in the luxury goods sector for over 18 years, she brings a wealth of experience and an exceptionally high standard of work to the team. Previously a client of Appetite Direct, she appreciates the company’s passion for creating exceptional menus and delivering memorable events.
Iona, our office angel, keeps everyone on track and uses her excellent organisational skills to get staff, chefs and kit to the right place at the right time – no easy task! Her experience working in retail ensures her customer service is of the highest standard and her happy demeanour keeps the office running smoothly. She spends her free time volunteering with local charities and even helped build a school in Peru where she discovered her love of travelling.
Having worked previously as Head Chef at Tusitala Restaurant in Edinburgh, Ewan has brought a wide variety of skills to Appetite Direct. Amongst others he has cooked for Politicians, Nobel Award winners and was personal chef to Chris Patten, the last Governor of Hong Kong. Having worked as a chef for the past 20 years Ewan brings a great depth of skill to the team and notably is admired for his butchery skills and bread making.
Scott is an up and coming chef who trained at the New Town Cookery school before coming to Appetite Direct. Whilst he has been at Appetite he has expanded his skill base and has worked at many prestigious events. Scott’s culinary skills lie in his flavour combinations and his ability to create fantastic Asian cuisine.
Gerson’s multi-tasking skills are invaluable to the kitchen and his happy outlook on life is a welcome addition. Originally from Brazil, Gerson loves to travel, he speaks many languages and has worked all over the world. Outside of the office he loves listening to music and is a percussionist. His favourite thing about Appetite is the team who work here, but he says the staff lunches are pretty amazing too.
Andras joined us recently as the head of logistics and delivery. As well as his role at Appetite he is a computer support wizard, a keen landscape photographer and he loves hiking and travelling. His aim now is to develop his culinary photography skills.
